  1. Begin by heating a large Dutch oven or soup pot over medium heat and heat the olive oil. Next add the onion, celery, carrot and garlic and cook until softened, around 5-8 minutes. 
  2. Pour in the chicken stock and bring to a boil, then reduce to a simmer. 
  3. Add in the diced chicken, cover and simmer for 20 minutes. 
  4. Righ before serving add the pastina and cook 6-8 minutes, cook to al dente. If serving the soup later, do not add the pasta. 
  5. If using stir in the parmesan and lemon juice. Add salt and pepper to taste.

Ingredients
 

  • 1 tablespoon olive oil
  • 1 small onion finely chopped
  • 2 stalks celery finely chopped (about 3/4 cup diced)
  • 1 large carrot peeled and finely chopped (about 1 cup diced)
  • 2 garlic cloves minced
  • 6-8 cups reduced-sodium chicken broth (homemade or store-bought)
  • 1 1/2 cups finely diced chicken
  • 1 cup uncooked star pastina pasta
  • 1/2 cup freshly grated parmesan cheese
  • 1-2 tablespoons lemon juice (optional)
  • Salt and pepper to taste

Instructions
 

  • Set a large pot or Dutch oven over medium heat, and heat the olive oil.
  • Add the onion, celery, carrot and garlic. Cook until softened, about 5 to 8 minutes.
