Chicken Pastina Soup

Begin by heating a large Dutch oven or soup pot over medium heat and heat the olive oil. Next add the onion, celery, carrot and garlic and cook until softened, around 5-8 minutes.

Pour in the chicken stock and bring to a boil, then reduce to a simmer.

Add in the diced chicken, cover and simmer for 20 minutes.

Right before serving add the pastina and cook 6-8 minutes, cook to al dente. If serving the soup later, do not add the pasta.

If using stir in the parmesan and lemon juice. Add salt and pepper to taste.
