Start your little one's day off right with these perfectly tender, no sugar added 3 ingredient banana waffles! Made with just oats, overripe bananas, and eggs, breakfast doesn't get much easier than this!
1cupmashed overripe banana(about 2 large bananas or 3 small)
4large eggs
Optional Add-ins:
1teaspoonvanilla extract
1teaspooncinnamon
1/4teaspoonsalt
Instructions
Add all your ingredients into a high speed blender. Blend very well, until smooth and no lumps remain.
Heat a waffle iron as per the box directions. Spray with cooking spray. Once hot, pour spoonfuls of the batter to cover the iron. Cook the waffle until crispy on the edges. Remove from the waffle iron and cook the remaining batter.
Serve the waffles immediately with your favorite toppings.
Notes
Don't overblend. Although this oatmeal waffle recipe comes together in the blender, you don't want to blend too long. Just blend until the batter is smooth, then stop.
Oil your griddle. For best results, brush your griddle with a little melted coconut oil or use some cooking spray. A silicone pastry brush works wonders!
Only use super-ripe bananas. Since the bananas are serving as the sweetener and oil in this recipe, they really need to be completely brown. This will release the natural sugars to add a sweet flavor and extra moisture.
Try a food processor. No blender on hand? Use a food processor to blend these basic ingredients into a smooth batter.
