Frozen Banana Pops with Yogurt

These refreshing frozen banana pops with yogurt are the ultimate healthy treat for those hot summer days! They're made with fresh bananas, a little yogurt, and your favorite toppings, making them endlessly customizable and totally delicious. Get the kids involved and teach them how to make their own healthy snacks!

Ingredients
 

  • 4 ripe bananas, peeled and cut in half
  • 3/4 cup vanilla Greek yogurt (or flavor of choice)
  • Toppings of choice - sprinkles, mini chocolate chips, coconut, peanut butter, chopped nuts, etc.
  • 8 popsicle sticks

Instructions
 

  • Line a baking sheet with parchment paper or wax paper.
  • Halve and peel each banana. Insert a popsicle stick into each banana half so that it’s secure.
  • Place the yogurt into a bowl (or you can also do it over the tub of yogurt). Using a small spatula or spoon, spread each of the banana halves with an even layer of yogurt until the top and sides of the banana are well coated and no longer exposed. Allow the excess yogurt to drip back into the bowl or yogurt container.
  • Evenly coat the banana pops with sprinkles or toppings of your choice.
  • Place yogurt covered bananas on the parchment lined baking sheet. Freeze until the yogurt has hardened and toppings are secure, about 2 hours. Allow additional time if you would like the banana to be frozen through. Serve frozen and enjoy!

Notes

  • Use ripe bananas that are still slightly firm. In this case, you don't want overripe bananas since they will be too soft and mushy, which will make it harder for the popsicle stick to stay in place.
  • Don't poke the popsicle stick too far into the banana or it will poke through the other side and the banana may break. Instead, poke it into the banana half about an inch.
  • Depending on the yogurt you choose, you can try dipping the banana pop into the yogurt, but if it's too thick and creamy, the banana may get stuck and fall off the popsicle stick. I found it easier to spread the Greek yogurt in a thick layer over the banana with a small spatula.
  • If you don't want to use vanilla Greek yogurt, you can also use plain Greek yogurt mixed with a bit of maple syrup or honey and vanilla extract. Other flavors like strawberry or blueberry would be fun too!
