Impress your whole family with these delicious mini pizzas made in the air fryer or oven! They come together so fast, and everyone can add their favorite toppings for a fun and healthy meal. Can be made in less than 30 minutes!
Combine the flour, baking powder and salt in a medium bowl. Add the Greek yogurt and mix until it becomes crumbly in texture.
Use your hands to knead the dough for a few minutes until it starts to come together into a ball. If it still feels too dry, add 1 tablespoon of additional Greek yogurt at a time until the dough resembles a pizza dough consistency.
Sprinkle a little flour on a flat surface and roll out the dough until flat. I like to roll it out to about ¼ inch thickness for these mini pizzas, but you can roll it out to your desired thickness.
Use a circular cookie cutter or circular object such as a wide glass or mason jar lid to cut out small circles from the dough. Place the dough circles on a parchment paper-lined pan.
Spread a small amount of pizza sauce on each dough circle until evenly covered.
Add any optional toppings. Sprinkle cheese on top of the sauce and toppings on each dough circle.
To cook mini pizza in air fryer:
Brush the air fryer basket or tray lightly with olive oil and place dough circles on the basket. Air fry at 375° F for 5-7 minutes, or until cheese is golden brown and crust is slightly crispy. You may need to work in batches, depending on the size of your air fryer. Remove and let cool for 5 minutes before serving.
To bake in oven:
Preheat the oven to 400 degrees F.
Bake for 15-17 minutes, or until the cheese melts and the crust gets slightly brown and crispy. The mini pizzas will puff up slightly while baking and deflate once cooled.
Notes
The number of mini pizzas this recipe makes will depend on how thin you roll the dough and the size of your cutter. I rolled mine about 1/4 inch thick and got about 12-14 4-inch mini pizzas.
If you don't have whole wheat or white whole wheat flour on hand, you can also use all-purpose or self-rising flour. Just skip the baking powder and salt if you sub in self-rising flour instead.
You can also freeze the pizza dough circles ahead of time and then simply add the toppings and cook when ready to serve. You may need to add a few extra minutes to the cooking time if cooking from a frozen state.
To make these mini pizzas even more fun, you can cut the dough into fun shapes using cookie cutters before adding the toppings. Try heart, star or teddy bear pizzas!
