What is Fiestada Pizza?
Most people’s initial exposure to fiestada pizza was in their school lunches. It’s a type of frozen pizza sold in individual servings, perfect for serving in school settings.
They were always the highlight of my lunch week and you get to add your favorite taco toppings like sour cream, green onions, olives, and more!
Why We Love This Recipe

Ingredient Notes
- Ground beef: For this fiestada beef pizza, I use ground beef. Feel free to substitute ground turkey or chicken for a lower fat option.
- Taco seasoning: Either use my homemade taco seasoning blend or store-bought. Look for reduced sodium to limit the salt.
- Pizza dough: Either make your own pizza dough (like this easy Greek Yogurt Pizza Dough) or buy store-bought dough. Feel free to use whole-wheat or regular wheat.
- Pizza sauce: Doctor some store-bought pizza sauce or this homemade Low Sodium Pizza Sauce with spices to make a zesty sauce reminiscent of enchilada sauce.
- Spices: You’ll need some chili powder, ground cumin, garlic powder, and onion powder for the sauce to give it an extra kick of flavour.
- Shredded cheese: Use a blend of cheeses, mild cheddar cheese and mozzarella, for the perfect melt.
Step-by-Step Instructions
- Preheat the oven to 450 degrees F.
- In a large skillet over medium-high heat, add ground beef and cook until brown and crumbly, about 5-7 minutes. Drain the grease. Sprinkle the taco seasoning on it and cook for an additional minute.
- Sprinkle some cornmeal or flour over your working surface to prevent the dough from sticking. Take pizza dough and cut it in half. Stretch or roll each half into a thin crust and place it on a nonstick baking sheet to form two small pizzas.
- Bake them in the oven for 3 minutes. Take the pizza out after 3 minutes but do not turn off the oven.
- Meanwhile, in a small bowl, mix together pizza sauce, chili powder, cumin, garlic powder and onion powder until combined.
- Spread half of this mixture over each pizza. Sprinkle beef, veggies (if adding) and cheese evenly over top of the sauce on each pizza.
- Bake again for 10-12 minutes until the cheese melts and the crust turns crunchy. Serve hot or at room temperature for a school lunch.

RECIPE TIPS
- You may need to add a bit of water to the pan when you add the taco seasoning to the ground beef to prevent the spices from sticking to the bottom of the pan.
- We also like to add veggies to this fiestada pizza like diced red bell pepper or diced tomatoes. This is a basic fiestada pizza recipe, but feel free to spruce it up with veggies!
- Try to find a reduced sodium taco seasoning if possible. I like to make my own homemade taco seasoning, but you can use store-bought if in a pinch.
- If you want to make mini pizzas, you can also divide the dough into quarters and make 4 personal-sized pizzas. You can also freeze them individually for a quick meal!
Recipe FAQs
Of course! This school cafeteria classic is easy to make at home. Start with regular pizza dough and top it with seasoned pizza sauce. Add a mix of melting cheeses and taco meat. Bake and enjoy!
Although processed foods aren’t known for being super nutritious, homemade Mexican fiestada pizza can easily be made to your health standards. It has a balance of carbohydrates, protein, and fat. Consider adding a bunch of veggies to each slice or serving it with a salad for added nutrients and fibre. Substitute whole wheat pizza crust for added whole grains and fibre.
If you want to send pizza in your kid’s lunch box, try one of these easy methods:
*Send it cold (wrapped in plastic or foil or in a container)
*Heat it at home, wrap in foil, and send in a thermal lunch box with a hot pad (see Best Lunch Box to Keep Food Warm for additional tips)
*Have them reheat it at school in a microwave (if available)
Storage Guidelines
- Refrigerator: This fiestada pizza stores just like regular pizza. Let it cool to room temperature then store leftovers in the fridge in an airtight container. You can also wrap each slice in plastic wrap or put in a reusable bag to make it easy to send in your kid’s lunchboxes. Fiestada pizza can be eaten cold.
- To reheat: You can also reheat it by microwaving it for 20-30 seconds or baking it in the oven at 350 for 5-10 minutes.
Optional Mexican Pizza Toppings
Level up the fun and tastiness of this pizza by including some extra toppings after the pizza has been cooked for a delicious taco pizza!

- Salsa
- Green onions
- Cotija cheese
- Olives
- Diced raw tomatoes
- Diced onion
- Cilantro

Serving Suggestions
This fiestada pizza recipe already has a balance of protein, fat, and carbohydrates, but I like to serve it with extra vegetables on the side, like a Southwestern salad, Air Fryer Zucchini Fries, or steamed broccoli. Raw veggies and dip taste great with it too!
Recipe Variations
- Semi-homemade: Use a can of enchilada sauce instead of the pizza sauce and spices to skip a step.
- Change the meat: Add leftover carne asada or fajita meat instead of ground beef.
- Gluten-free: Try a gluten-free pizza dough. Adjust the baking instructions according to the recipe or package.
- Dairy-free: Use your favorite non-dairy cheeses to make this pizza dairy and lactose-free.
