Easter Bunny Snack Board

This adorable Easter bunny snack board is the cutest appetizer for your Easter brunch or served as a midafternoon snack! Loaded with a variety of fruits, vegetables, and even a miniature bunny made out of cheese, it's a great addition to any Easter gathering and will quickly become a new family tradition!

Ingredients
 

  • 4 Baby bel cheese rounds
  • 1 Yogurt melt
  • 4 Large circular crackers (we used Breton)
  • 2 tablespoons Peanut butter
  • 1 cup Green grapes, halved or quartered
  • 1/2 cup Raspberries
  • 6 Small circular crackers (or your favorite crackers)
  • 1 Mozzarella cheese slice
  • 1 cup Popcorn
  • 1/2 cup Annie's Cheddar Bunnies
  • 1/2 English cucumber, cut into 1/4 inch slices
  • 1 cup Baby carrots
  • 1 cup Snap peas
  • 1 cup Blueberries

Optional:

  • Mini chocolate eggs
  • Cookie cutters (circle, chick, flower, heart, etc...)

Instructions
 

  • Start by making the cheese bunny. Using a circular cookie cutter, cut off one end of a baby bel cheese round. Next, with the same circular cookie cutter, cut off the other end of the baby bel cheese round. The pieces of cheese should resemble bunny ears.
  • Using a mini heart cookie cutter, cut a heart out of another baby bel cheese round. Cut the heart in half from top to bottom so that you have two hearts. These will be the bunny’s feet.
  • In the center of a board or tray, add a baby bel cheese round for the bunny’s body. Place one right above for the bunny’s head. Place the two cheese “ears” on top of the head so that it looks like a bunny’s head. Next, place the two hearts upside down under the bottom cheese round to form the bunny’s feet. Place a yogurt melt in the center of the bottom cheese round to form the bunny’s tail.
  • Next, make the flower crackers by spreading a thin layer of peanut butter over each of the large circular crackers. Arrange the green grape halves in a circle around the outer edge of the crackers. Place a raspberry into the center. Arrange the flower crackers around the board.
  • Next, cut out small chicks or bunnies out of the slice of mozzarella cheese. Place them on top of the other small circular crackers. Arrange on the board.
  • Add a couple of small bowls of popcorn and Annie’s cheddar bunnies to the board.
  • Take a small flower cookie cutter, and cut flowers from the cucumber slices.
  • Fill in the gaps around the cheese bunny with cucumber flowers, baby carrots, snap peas, raspberries and blueberries. Optional: You can also scatter a few chocolate eggs in for added interest and color as well. Serve immediately and enjoy!

Notes

  • This Easter snack board is best served immediately since the cheese will start to dry out if sitting for too long. If you'd like to make it ahead of time, you can assemble most of it and then add the cheese right before serving.
  • The quantities provided are just rough estimates. You can adjust how many snacks you add depending on the size of your tray or platter.
