Mini cucumber sandwiches are the perfect kid-friendly lunch! The flavor of cucumbers is really mild and refreshing, and my kids love the lemony dill and chive cream cheese. The cheese spread has so much flavor and the tiny sandwiches are just the right size for little hands.
Serve them as a light lunch or host a kid-friendly tea party with fun dresses, tea cups, and more! These tasty little sandwiches also make a great vegetarian lunch to pack in those lunch boxes!

Ingredient Notes
- Whole wheat bread: For extra fiber, I recommend whole grain bread, but you can use any kind of bread that you prefer. Just be sure to remove the crusts first.
- English cucumber: English cucumbers have a really mild, clean flavor and consistent size ideal for these mini sandwiches. They also have thinner skins and are much less bitter, which is important when serving to kids.
For the herb cream cheese
- Cream cheese: Feel free to use full-fat or reduced-fat Neufchatel cream cheese.
- Plain Greek yogurt: For extra creaminess, calcium and protein.
- Mayonnaise: Mayo has a distinctly tangy taste and the cream cheese filling tastes much better with it!
- Fresh herbs: Fresh dill and chives are mild and aromatic without being too spicy or savory. They’re great entry-level herbs for kids.
- Lemon juice: To add a pop of freshness and a little acidity.
- Seasonings: Season with garlic powder, salt, and freshly ground black pepper.
Step-by-Step Instructions
- Allow the sliced cucumbers to sit for about 15-30 minutes to draw out the moisture. Afterward, gently pat them dry with fresh paper towel.
- While the cucumbers are resting, prepare the spread. In a medium-sized bowl, use a handheld mixer to combine the softened cream cheese, Greek yogurt, mayonnaise, dill, chives, lemon juice, garlic powder, and salt until smooth and well-blended.
- Spread one side of each bread slice with the herbed cream cheese mixture. Then, layer the cucumber slices onto half of the bread slices and season them with black pepper to taste. Place the remaining bread slices, cream cheese side down, on top to form sandwiches.
- With a sharp chef’s knife, cut each sandwich into quarters by pressing down through the bread to the bottom. This will yield 16 small sandwiches. You might need to gently adjust the cucumber slices as they may shift a bit during cutting.
